Christmas Chocolate Truffles

Makes 24 Balls
- 1 cup raw almonds
- 1 cup raw walnuts
- 10 pitted dates
- 2 tbsp melted coconut oil
- 1/2 cup raw cacao powder (or dark cocoa powder)
- 1/2 cup amaranth or rice puffs
- Desiccated Coconut, and cacao powder to decorate
In a food processor/blender, crush the almonds and walnuts into a fine meal. Add dates, coconut oil, cacao powder and blend until smooth. Stir through the amaranth/rice puffs then roll into balls. Coat with coconut or cacao powder.
