Christmas Chocolate Truffles

Makes 24 Balls

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 10 pitted dates
  • 2 tbsp melted coconut oil
  • 1/2 cup raw cacao powder (or dark cocoa powder)
  • 1/2 cup amaranth or rice puffs
  • Desiccated Coconut, and cacao powder to decorate

In a food processor/blender, crush the almonds and walnuts into a fine meal. Add dates, coconut oil, cacao powder and blend until smooth. Stir through the amaranth/rice puffs then roll into balls. Coat with coconut or cacao powder.
