Healthy Baked Beans

Serves 2
- 1 tin butter beans
- 1 tin of tomatoes
- 1/2 brown onion diced
- 1 clove garlic crushed
- 2 handful baby spinach
- 1/2 cup roughly chopped parsley
- 1/2 cup basil leave (torn)
- 1 teaspoon smoked paprika
- Salt and pepper
Sauté onions and garlic with a little olive oil, salt and pepper and smoked paprika. Add fresh herbs, tomatoes and beans and simmer until beans are cooked through and tomatoes are broken down, stir through spinach. Serve with a poached egg and crunchy fresh toast.
