Luxton Oat and Seed Slice

- 1 cup of organic rolled oats
- 1/2 cup nut meal
- 1/2 cup pumpkin seeds
- 1/4 cup chia seeds
- 1 egg
- 1/2 cup coconut oil, melted
- 1/2 cup dried dates/figs
- 1/2 cup pistachio nuts
Combine all ingredients then press into a small slice tray lined with baking paper. Bake in a moderate oven until golden brown. Cool in tray, remove and cut into slices. Keeps in an airtight container for 4 days.
