Hearty Baked Beans
Serves 2
1 cup butter beans (or beans of choice)
1/2 brown onion diced
2 clove garlic crushed
2 handful of baby spinach
1/2 cup roughly chopped parsley
1/2 cup basil leave (torn)
1 teaspoon smoked paprika
1 teaspoon turmeric powder
Pink Himalayan Salt and fresh pepper
Feel free to add your own twist - for a meaty option, consider adding sliced chorizo when sautéing onions and garlic.
Saute onions and garlic with a little olive oil, spices, salt, and pepper. Add herbs, tomatoes, and beans and simmer until beans are cooked through and tomatoes are broken down. Stir through spinach.
Serve with a poached egg.
